Winemaking Notes
The Sauvignon Blanc was picked at the optimal time at each vineyard to highlight the best attributes of the grapes. A balance of acidity, slightly herbal, and citrus notes come with a grape picked later in the season which lends more of the pineapple and guava notes. Once in the winery, the grapes were pressed, the juice was clarified, and fermented at a cool temperature to retain the bright aromas and flavors found in our Sauvignon Blanc. After fermentation (~14 days), each of the lots were cleaned up, stabilized and kept separate until our winemaker created the perfect blend before bottling. The result is a fresh, clean wine with vibrant acidy and expressive tropical fruit characters.
